Ingredients
3 | shallots, chopped |
¼ cup(s) | water |
¼ cup(s) | vinegar |
1 tsp | tarragon, chopped |
5 | peppercorns |
2 tbsp | butter |
1 tbsp | flour |
2 tbsp | tomato puree |
2 | egg yolks |
some | salt and pepper |
2 tbsp | water |
Instructions
In a saucepan, combine 1/4 cup of water with the vinegar, shallots, tarragon and the peppercorns. Cook for 10 minutes over medium heat, then strain into another saucepan and bring to the boil again.Knead together the flour and the butter. Add into the sauce and cook stirring until smooth. Stir in the tomato purée and cook over low heat for approximately 5 minutes.
Whisk the egg yolks with 2 tablespoons of water and stir into the sauce. Take from heat and season to taste with salt and pepper.
