- Ingredients:
- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 1 cup buckwheat flour
- 1/2 cup oatmeal, finely ground
- 1/2 cup granulated sugar
- 1 Tablespoon salt
- 1 cup rice flour
- 1 cup rye flour
- 1 cup oat flour
- 1/2 cup bran
- 1/2 cup baking powder
- For a smaller batch, use the following conversion:
- 1/4 cup whole wheat flour
- 1/4 cup all-purpose flour
- 1/4 cup buckwheat flour
- 3 Tablespoons oatmeal, finely ground
- 2 Tablespoons granulated sugar
- 1 teaspoon salt
- 1/4 cup rice flour
- 1/4 cup rye flour
- 1/4 cup oat flour
- 3 Tablespoons bran
- 2 Tablespoons baking powder
Mix all ingredients together and store in airtight container. When ready to use, measure 1 cup of mix and combine with 1 egg, 3/4 cup whole milk (or soy milk), and 2 Tablespoons of vegetable oil. Gently blend, removing any lumps. Pour onto preheated griddle and cook accordingly. Top pancakes with pineapple/mango or ohello berry sauce and serve immediately.
Add: 2 eggs, 1-1/2 cups milk, and 4 Tablespoons vegetable oil. Yields eighteen 4-inch pancakes.
Note: The same mixture can be used for waffles. Simply separate the eggs and beat the egg whites until stiff peaks form, then fold into waffle batter just prior to pouring onto griddle.
