Ingredients

Serves: 4

• 2 tomatoes, cored and cut into 8 wedges
• 2 eggplants, quartered lengthwise and sliced into 1/2-inch pieces
• 1 corn cob, sliced into 8 pieces
• 4 teaspoons olive oil
• 2 serrano chiles, seeded and minced
• 2 garlic cloves, crushed

Preparation method

Prep: 10 mins | Cook: 10 mins

1. Preheat grill to Medium.
2. Measure out 4 12×12-inch squares of aluminum foil. Distribute vegetables equally among squares.
3. Top vegetables with oil, chile, and garlic. Seal packets and place on grill. Cook for 10 minutes, turning once, until vegetables are tender. Serve.
