Ingredients

Serves: 4
  • 1 1/2 cups flour
  • 1/2 cup semolina flour
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 tablespoon olive oil
  • 4 to 6 tablespoons water

Preparation method

Prep: 30 mins | Extra time: 50 mins, resting

1. Place flours and salt in food processor and pulse to combine. Add eggs and olive oil, and pulse until crumbs form.
2. With machine running, add water until dough forms a ball. Remove from food processor and wrap in plastic wrap. Refrigerate for 30 minutes.
3. Cut ball into fourths and run through pasta machine, ending with the number 6 setting. Hang to dry for 15 to 20 minutes.
4. Cut into narrow strips and let dry fully. When ready to serve, cook in boiling water for 2 to 3 minutes until al dente.
