Ingredients

For the dumplings:
¾ l water
40 g butter
250 g semolina
3  eggs
100 g Cheddar cheese, grated
salt and pepper
1 pinch(es) nutmeg
50 g Cheddar cheese, diced
50 g bacon, diced
For the sauce:
40 g butter
40 g flour
¼ l beef stock
¼ l milk
1  egg yolk
1 tsp lemon juice
salt and pepper
1 bunch(es) chives, chopped
1 bunch(es) parsley, chopped
dill, some sprigs, chopped

Instructions

Bring the water with the butter and a pinch of salt to the boil. Trickle in the semolina and stir until a lump forms. Allow to cool slightly, then fold in the eggs one at a time and then the grated cheese. Season with pepper and nutmeg.

Damp your hands with cold water and form the batter into small dumplings, then stuff each dumpling with some bacon and diced Cheddar. Transfer into boiling salted water and cook until the dumplings come to the surface. Drain.

For the sauce, sweat the flour in the butter until golden, then add stirring the beef stock and the milk. Bring it to the boil, constantly stirring and simmer over low heat for approximately 10 minutes. Whisk the egg yolk with a little of the sauce until well combined. Add the mixture to the sauce and leave on the heat for some more minutes, but dont’t allow to boil anymore. Season to taste with lemon juice and stir in the herbs.

Serve the dumplings with the herb sauce.
