Ingredients
250 ml | milk |
1 | vanilla pod, pulp scraped out |
40 g | semolina |
1 pinch(es) | lemon, grated peel |
3 | eggs |
60 g | sugar |
4 leaves | gelatin |
150 ml | whipping cream |
500 g | strawberries |
1 tbsp | honey |
4 tbsp | balsamic vinegar |
Instructions
In a saucepan, heat the milk with the vanilla pod and pulp. Soak the gelatin in cold water. Separate the eggs. Briefly whisk the egg yolks.Bring the milk to a boil and add the semolina in a thin stream, stirring constantly. Stir in the egg yolks. Remove from the heat and allow to soak for some minutes. Add the lemon peel and the squeezed out gelatin and stir until the gelatin has dissolved. Allow to cool down.
Whisk the egg whites with the sugar until stiff. Whisk the cream until half stiff. When the semolina has cooled down, fold in the cream and the beaten egg whites. Pour the mixture into ramekins and refrigerate for 2 hours.
Hull the strawberries and half or quarter larger ones. With a wire whisk, mix the vinegar and the honey. Shortly before serving, marinate the strawberries in the mixture for 5 minutes.
Turn out of the ramekins the semolina blancmange onto dessert plates (if the blancmange sticks to the ramekins, dip the ramekins briefly into hot water). Arrange the strawberries on top or around the blancmange.
