Ingredients
250 g | pasta, Fusilli or shell-shaped |
1 tbsp | olive oil |
1 bunch(es) | spring onions, chopped, also green part |
400 g | canned tuna in brine, drained and flaked |
175 g | prawns, cooked, peeled, thawed if frozen |
2 g | corn flour |
426 g | skimmed milk |
salt and pepper | |
4 | tomatoes, thinly sliced |
25 g | Cheddar cheese, grated |
175 g | mushrooms, optional |
Instructions
Preheat the oven to 190°C.Bring water in a large saucepan to the boil and cook the pasta al dente. Drain well and put pasta in large bowl.
Heat the oil in a frying pan and fry all but a handful of spring onions (and all of the mushrooms if you are using them), stirring constantly for 4-5 minutes, or until softened. Once cooked add spring onions and mushrooms to pasta, add tuna and prawns. Mix in all ingredients with pasta until well combined.
Blend cornflour with a little bit of milk to make paste. Pour the remaining milk into a saucepan and stir in the paste. Heat, stirring until the sauce starts to thicken. Season with salt and pepper.
Pour the sauce over the pasta and stir until well combined.
Transfer mixture to an oven-proof gratin tray (and place on a baking sheet to avoid bubbling over mess!).
Arrange the thin tomato slices over the top of the pasta and sprinkle evenly with cheese. Bake in the oven for 30-35 minutes or until golden. Remove from oven and sprinkle remaining spring onions.
Serve with salad.
Tip:Goes really well with a Caribbean red hot chilli sauce
