|500 g||potatoes, peeled and diced|
|salt and freshly ground black pepper|
|3||carrots, peeled and sliced|
|1 ½ l||beef stock|
|4 tbsp||parsley, chopped|
|4 slice(s)||bacon, chopped|
InstructionsIn a saucepan, bring the stock to a boil. Add the bacon, onions, potatoes and the carrots. When boiling again, reduce the heat, cover and cook over low heat for 70-90 minutes until the soup is thick and creamy.
Season to taste with salt and pepper. Stir in the parsley and serve immediately.
