Ingredients
500 g | potatoes, peeled and diced |
3 | onions, chopped |
salt and freshly ground black pepper | |
3 | carrots, peeled and sliced |
1 ½ l | beef stock |
4 tbsp | parsley, chopped |
4 slice(s) | bacon, chopped |
Instructions
In a saucepan, bring the stock to a boil. Add the bacon, onions, potatoes and the carrots. When boiling again, reduce the heat, cover and cook over low heat for 70-90 minutes until the soup is thick and creamy.Season to taste with salt and pepper. Stir in the parsley and serve immediately.
