Instructions
Preparation:Peel the hard-cooked eggs and set aside.
In a bowl beat the other two eggs and set aside.
Put flour in a bowl and set aside.
Crumble bread crumbs and lay out on a flat surface.
Divide sausage into 6 portions.
Making the Scotch Eggs:
Roll each egg in flour. With hands press a portion of the sausage around each egg.
Dip sausage-wrapped eggs into bowl with beaten eggs and roll in bread crumbs.
Heat vegetable oil in a pan to 180°C.
Cook each egg in oil about 4 minutes or until sausage is cooked and browned.
Drain on paper towels.
