Ingredients
500 g | turkey breast fillet |
1 bunch(es) | greens |
1 | onion |
750 ml | dry white wine |
½ | lemon, juice |
1 | bay leaf |
1 | clove |
300 g | mixed mushrooms (cremini, oyster mushrooms, chanterelles, porcini) |
2 tbsp | butter |
1 | onion |
1 tbsp | flour |
1 dash(es) | wine, white |
120 ml | single cream |
2 tbsp | breadcrumbs, optional |
3 tbsp | cheese, grated, optional |
salt and pepper | |

5 | vol-au-vents, optional |
Instructions
Roughly chop the greens and the onion. Place together with the meat and the herbs into a saucepan. Add the white wine and the lemon juice and fill up with water until the meat is just covered. Add a generous pinch of salt and bring to a boil Cover and simmer over low heat for 30 minutes. Allow to cool.Clean and chop the mushrooms. Dice the onion. Heat 1 tablespoon of butter in a pan and stir-fry mushrooms and onions until golden. Season to taste with salt and pepper.
In a saucepan, heat 1 tablespoon of butter. Add the flour and cook stirring until pale yellow. Add the wine, 150 ml of the cooking liquid of the turkey breast and the cream. Bring to a boil, stirring constantly with a wire whisk. Cook stirring for a couple of minutes. Season to taste with salt, pepper, Worcestersauce and lemon juice.
Cut the turkey breast into bite-sized pieces and add to the sauce together with the mushrooms. Adjust the seasoning.
Ladle the fricassee into 4 ramekins. Sprinkle with cheese and breadcrumbs and bake in the preheated oven at 180°C for 10 minutes or until golden.
Serve with baguette.
Variations:
Omit the cheese and serve the fricassee in warmed vol-au-vents without baking.
You may substitute veal or chicken for the turkey.
