Ingredients

500 g	turkey breast fillet
1 bunch(es)	greens
1	onion
750 ml	dry white wine
½	lemon, juice
1	bay leaf
1	clove
300 g	mixed mushrooms (cremini, oyster mushrooms, chanterelles, porcini)
2 tbsp	butter
1	onion
1 tbsp	flour
1 dash(es)	wine, white
120 ml	single cream
2 tbsp	breadcrumbs, optional
3 tbsp	cheese, grated, optional
	salt and pepper
	lemon juice
	Worcestersauce
5	vol-au-vents, optional

Instructions

Roughly chop the greens and the onion. Place together with the meat and the herbs into a saucepan. Add the white wine and the lemon juice and fill up with water until the meat is just covered. Add a generous pinch of salt and bring to a boil Cover and simmer over low heat for 30 minutes. Allow to cool.

Clean and chop the mushrooms. Dice the onion. Heat 1 tablespoon of butter in a pan and stir-fry mushrooms and onions until golden. Season to taste with salt and pepper.

In a saucepan, heat 1 tablespoon of butter. Add the flour and cook stirring until pale yellow. Add the wine, 150 ml of the cooking liquid of the turkey breast and the cream. Bring to a boil, stirring constantly with a wire whisk. Cook stirring for a couple of minutes. Season to taste with salt, pepper, Worcestersauce and lemon juice.

Cut the turkey breast into bite-sized pieces and add to the sauce together with the mushrooms. Adjust the seasoning.

Ladle the fricassee into 4 ramekins. Sprinkle with cheese and breadcrumbs and bake in the preheated oven at 180°C for 10 minutes or until golden.

Serve with baguette.

Variations:
Omit the cheese and serve the fricassee in warmed vol-au-vents without baking.

You may substitute veal or chicken for the turkey.
