Ingredients
250 ml | milk |
100 g | flour |
1 | egg |
2 | egg yolks |
salt | |
600 g | asparagus, woody ends removed |
sugar | |
1 tbsp | melted butter |
2 tbsp | oil |
1 | kohlrabi, peeled and diced |
200 ml | single cream |
100 g | freshly grated Parmesan cheese |

Instructions
Stir into the flour the milk, ½ teaspoon of salt and the egg and egg yolks. Cover the batter and allow to stand for 30 minutes.Cut the asparagus into bite-sized pieces and cook in salted water with a pinch of sugar until al dente. Drain, set aside and keep warm. Collect the broth.
Stir the melted butter into the pancake batter. In a pan, heat some oil and bake 8 pancakes, one after another, until golden. Set aside and keep warm.
Cook the kohlrabi in the asparagus broth with the single cream for 10 minutes, then purée with a hand blender. Season to taste with salt and pepper.
Preheat the oven to 250°C. Arrange the pancakes on a plate. Top each with some asparagus and kohlrabi sauce. Roll up and place the pancakes side by side in a buttered casserole dish. Coat with the remaining sauce and sprinkle with the cheese. Bake for 10 minutes or until golden brown.
