Ingredients

250 ml	milk
100 g	flour
1	egg
2	egg yolks
	salt
600 g	asparagus, woody ends removed
	sugar
1 tbsp	melted butter
2 tbsp	oil
1	kohlrabi, peeled and diced
200 ml	single cream
100 g	freshly grated Parmesan cheese
	butter

Instructions

Stir into the flour the milk, ½ teaspoon of salt and the egg and egg yolks. Cover the batter and allow to stand for 30 minutes.

Cut the asparagus into bite-sized pieces and cook in salted water with a pinch of sugar until al dente. Drain, set aside and keep warm. Collect the broth.

Stir the melted butter into the pancake batter. In a pan, heat some oil and bake 8 pancakes, one after another, until golden. Set aside and keep warm.

Cook the kohlrabi in the asparagus broth with the single cream for 10 minutes, then purée with a hand blender. Season to taste with salt and pepper.

Preheat the oven to 250°C. Arrange the pancakes on a plate. Top each with some asparagus and kohlrabi sauce. Roll up and place the pancakes side by side in a buttered casserole dish. Coat with the remaining sauce and sprinkle with the cheese. Bake for 10 minutes or until golden brown.
