Ingredients
750 g | lean stew beef, cubed |
750 g | potatoes, peeled and diced |
1 kg | Savoy cabbage, sliced |
250 ml | beef stock |
salt and freshly ground black pepper | |
nutmeg | |
75 g | bacon, diced |
1 | onion, chopped |
1 tbsp | butter |
Instructions
In a roasting tin, melt the butter. Add the beef and season with salt and pepper. Top with layers of potatoes and cabbage. Season each layer with salt, pepper and nutmeg. Add the beef stock. Cover and cook over low heat for 50-60 minutes or until the meat is tender. Add more stock if necessary, to avoid burning.In a pan, fry the bacon and the onion until golden and crispy. Serve the stew sprinkled with the bacon and onion mixture.
