Ingredients
1 kg | savoy cabbage, sliced |
500 g | carrots, sliced |
2 | onions, chopped |
2 | apples, peeled, cored and diced |
250 g | ham, diced |
200 g | crème fraîche |
3 tbsp | mustard |
2 tbsp | butter |
1 ¾ l | vegetable stock |
salt and pepper | |
marjoram |
Instructions
In a large pot, melt the butter and sauté the onions until lucent. Stir in the cabbage and the carrots and cook stirring for 10 minutes. Pour in the stock and cook over low heat for 15 minutes. Season to taste with salt, pepper and marjoram. Stir in the apple and the ham and cook for 5 more minutes.Mix together the crème fraîche and the mustard.
Serve the soup together with the crème fraîche.
