Ingredients
600 g | potatoes, waxy |
salt and pepper | |
3 | hard boiled eggs |
100 g | black olives, cut in rings |
2 | red chili peppers, cut in rings |
2 | onions, chopped |
4 tbsp | olive oil |
280 g | sweet corn, canned |
lemon juice | |
200 g | grated Gruyère cheese |

Instructions
Cook the potatoes in lightly salted water for approximately 20 minutes. Peel and cut in slices. Peel the eggs and cut in slices.Sauté the onions until lucent. Add the chili peppers and olives. Drain the sweet corn and add it to the onions. Cook stirring for some minutes and season to taste with salt, pepper and lemon juice.
Layer half of the potatoes in a greased casserole dish and sprinkle with half of cheese. Cover with the remaining half of the potatoes, then the vegetable mixture and finish with the sliced, hard boiled eggs. Sprinkle with the remaining cheese.
Bake in the oven at 200°C for approximately 30 minutes.
