Ingredients

1 tbsp	olive oil
1 medium	onion, chopped finely
1 stalk(s)	celery, small, chopped finely
1 clove(s)	garlic, crushed
400 g	veal mince, lean
1	egg
80 g	baby spinach leaves, chopped
2 tbsp	fresh basil, chopped
60 g	Parmesan cheese, freshly grated
pinch(es)	nutmeg
	sea salt and freshly ground black pepper to taste
3 sheet(s)	frozen puff pastry, thawed
1	egg, beaten

Instructions

Heat oil in a saucepan. Cook onions, celery and garlic until the onions have softened; cool.

Preheat oven to 200°C and lightly grease two baking trays. Combine onions mixture, veal mince, egg, spinach, basil and cheese; mix well. Season with nutmeg, salt and pepper. Cut pastry sheets in half.

Place mixture into a large piping bag without a nozzle. Pipe a line of filling down the length of each pastry piece. Brush sides of pastry and roll each pastry piece from one wide edge to enclose filling.

Cut each roll into 4 pieces and place rolls, seam side down, onto baking trays. Brush with egg and pepper. Bake in oven for 30 minutes or until golden.
