sausage & mushroom quiche details
INGREDIENTS:Makes 7
Pastry:
120g butter, chilled
200g all purpose flour, sifted
¼ tsp salt
10g icing sugar, sifted
1 small egg, lightly beaten
Filling:
1 onion, chopped
80g button mushroom (canned), sliced
90g frankfurters, sliced
1 tbsp oil
125g milk
100g whipping/ double (dairy) cream
2 small eggs, lightly beaten
1 tsp salt
Black pepper to taste
METHOD:
- In a mixing bowl, rub butter into flour, salt and icing sugar using paddle of mixer or by hand until mixture resembles breadcrumbs. Add beaten egg at low speed and mix until a soft but not sticky dough is formed. Refrigerate for 30 minutes.
- In a frying pan, heat oil. Fry chopped onion till fragrant. Add mushrooms and frankfurters till lightly brown. Set aside.
- Mix milk, cream, eggs, salt and pepper until well blended. Set aside.
- Preheat oven at 190 degC. Divide pastry dough into 7 equal portions (about 52g each). Press each portion into greasedaluminium foil mould of diameter 4 inchto form a pastry base.
- Spoon fried filling into each pastry. Pour milk mixture (3) to about 90% full.
- Bake for 35-40 minutes or until pastry bases are well baked.
- Suggestion: Serve as main course with vegetable salad or mixed vegetables and fries.
