Ingredients
300 ml | chicken broth |
30 g | butter |
30 g | mushrooms, finely chopped |
20 g | flour |
4 tbsp | double cream |
2 tsp | lemon juice |
2 sprig(s) | parsley |
2 | peppercorns |
salt and pepper, to taste |
Instructions
Melt the butter in a saucepan, add the mushrooms and parsley and sauté for 5 minutes.Stir in the flour and the peppercorns.
Gradually add the stock, stirring constantly, until the sauce comes to the boil and thickens. Reduce the heat, cover, and simmer for 30 minutes.
Remove from the heat and strain back into the saucepan. Add the cream and lemon juice and reheat but do not allow to boil.
Serve with poultry or fish.
