Ingredients
1 kg | lean stewing beef, cut into cubes |
500 g | pork shoulder, cut into cubes |
50 g | flour |
3 tbsp | vegetables oil |
2 medium | onions, chopped |
6 clove(s) | garlic, minced |
900 ml | water |
2 medium | dried chiles, stems and seeds removed |
5 medium | dried red chiles, stems and seeds removed |
1 | jalapeno chile, sseds removed, finely chopped |
1 ½ tsp | cumin, ground |
3 tsp | dried oregano |
salt and pepper, to taste |
Instructions
Combine flour with salt and pepper and put into a large sealable plastic bag. Put meat inside the plastic bag and toss meat cubes with the seasoned flour.In a large skillet cook the meat in the oil over low heat, stirring often. Add the onions and garlic and sautee until softened. Add the water and let simmer for 1 hour.
Soak the dried chiles in hot water for 15 to 20 minutes. Process soaked chile peppers in a blender with a bit of water to make a pureÚ. Strain out excess liquid.
Add the chile pureÚ to the meat mixture along with all remaining ingredients and leave to simmer for 1-2 hours.
Serving suggestion:Serve with pinto beans and rice.
