Ingredients
2 | eggplants, diced |
1 | red capsicum, diced |
1 stalks | leek, cut into small stripes |
½ bunch(es) | parsley, chopped |
3 clove(s) | garlic, chopped |
salt and pepper | |
paprika powder | |
oregano | |
rosemary | |
1 glass(es) | tomato sauce |
2 tbsp | tomato paste |
some | olive oil |
some | chili flakes |
Instructions
Heat the olive oil in a wide pan and fry the garlic, then add the diced vegetables and the leek. Season to taste and fry until soft. Now add the tomato sauce and the tomato paste and let cook over low heat for 20 minutes. Add chili flakes to taste.Serve the sauce to pasta or gnocchi. This sauce is especially good with my recipe for spinach gnocchi.
