salmon sweet soy details
INGREDIENTS:2 salmon steaks, cleaned
50g broccoli, cut into florets
8 cherry tomatoes
10 stalks asparagus, trimmed
Marinade:
1 tbsp light soy sauce
1/2 tsp sugar
Sauce:
2-3 tbsp butter
2 tbsp light soy sauce
1½ tsp sugar
1 tsp dry white wine (optional)
Potato gallette:
200g potato, peeled and shredded
1/4 tsp salt
Dash of ground black pepper
Oil for frying
Garnishing:
Deep fried vermicelli
Method:
- Marinate salmon steaks with the marinade ingredients for at least 1 hour.
- Combine shredded potato, salt and black pepper in a bowl. Mix well. Before frying, squeeze off liquid from potato.
- Shape shredded potato to rounds of about 7cm diameter. Fry in oil until golden in color.
- Place butter in a non-stick frying pan to melt over a low heat. Fry the salmon at low heat until cooked, about 8 minutes for each side. Remove salmon onto serving dish.
- Combine all the sauce ingredients and pour onto the butter. Bring to a boil and remove.
- Blanch broccoli, cherry tomatoes and asparagus in oiled and salted water until just tender to bite.
- Arrange salmon steaks, potato gallette and vegetables on a plate. Drizzle sauce on the salmon. Garnish with deep fried vermicelli and serve.
