salmon puffs recipe details
Ingredients
150 ml | water |
½ tsp | salt |
75 g | butter, cut in pieces |
150 g | plain flour |
75 g | freshly grated Cheddar cheese |
2 | eggs |
100 g | smoked salmon, finely diced |
100 g | cream cheese |
1 tbsp | green olives, pimento stuffed, chopped |
Instructions
Preheat the oven to 200°C and grease 2 baking sheets.In a saucepan, heat water with salt and butter until the butter has melted, stirring constantly. Bring to a full boil. Add the flour all at once. Stir over low heat until the mixture leaves the sides of the saucepan and forms a ball. Remove from heat and cool slightly. Stir in the cheese and beat in the eggs, one at a time, beating until smooth and well combined after each addition.
Drop the batter by teaspoonfuls onto the baking sheets. Bake about 20 minutes or until puffy and golden. Remove from the baking sheets and allow to cool on racks.
Cut each puff in half and scoop out any soft centres. Mix the salmon with the cream cheese and olives and fill the puffs with the salmon mixture. Serve immediately.
