Kale stew with smoked pork sausages and potatoes recipe details
Ingredients
4 slice(s) | gammon, à 60 g |
4 | smoked pork chops |
4 | Polish sausages |
1 kg | kale |
2 tbsp | clarified butter |
2 | onions, diced |
1 tbsp | mustard |
400 ml | vegetable stock |
2 tbsp | rolled oats |
600 g | small potaotes in their jacket |
1 tbsp | butter |
salt and pepper | |
nutmeg |
Instructions
In a large saucepan, heat the clarified butter. Add the onions and the gammon and fry until slightly golden. Add the kale and cook stirring for a couple of minutes. Add half of the stock. Season with salt, pepper and nutmeg and stir in the mustard. Cover and cook for 45 minutes. Add the sausages. If too dry, add more of the stock. Cook for 30 more minutes.You should allow the kale stew to stand overnight or at least for a couple of hours, so the ingredients can unfold their full flavour. Afterwards reheat the stew, add a little stock if necessary and add the smoked pork cutlet and cook for 20 minutes.
Cook the potatoes until tender, then drain and toss in butter. Season with salt.
Take the smoked pork, the sausages and the gammon out of the saucepan. Stir the rolled oats into the kale and cook until smooth. Adjust the seasoning and return the meats.
Serve the kale on a warmed platter with the meats on top and surrounded by the potatoes.
