Ingredients
2 | salmon fillet steaks |
200 g | young spinach, trimmed and washed |
150 g | Gorgonzola cheese, crumbled |
200 g | single cream |
1 cl | dry white wine |
1 tbsp | flour |
lemon juice | |
1 clove(s) | garlic, finely chopped |
1 tbsp | butter |
1 tbsp | clarified butter |
salt and pepper | |
brandy |
Instructions
Sauté the garlic in the butter until lucent. Deglaze with the white wine, add the cream and bring to a soft boil. Let the Gorgonzola cheese melt in the sauce. Add the spinach and cook stirring until wilted. Switch off the heat and keep the sauce warm. Season to taste with salt, pepper and a dash of brandy.Pat dry the salmon, drizzle with lemon juice and season with salt and pepper. Dust with flour and fry in a hot pan in clarified butter over medium heat until just done. Take care not to overcook the fish!.
Serve with the sauce and pasta.
