salmon brine recipe details
This is a very simple brine for salmon. After soaking overnight, we prefer to smoke the fish, but this brine works just as well for grilled, baked or broiled salmon.
Ready in: 12 hours
Ingredients
Serves: 5- 2 cups water, or as needed
- 2 cups dry white wine, or as needed
- 1 tablespoon coarse salt
- 1/2 cup brown sugar
- 2-3 lemon slices
- 2-3 teaspoons thyme
- 2 teaspoons oregano
- 2 teaspoons basil
Preparation method
Prep: 12 hours1. In a large bowl, pour equal amounts of water and wine to cover however much salmon you have.
2. Stir in the rest of the ingredients until the salt and brown sugar are dissolved.
3. Submerse the salmon in this brine and soak overnight.
