Ingredients

750 g butternut squash, diced
250 g smoked salmon, diced
1  onion, chopped
40 g butter
40 g flour
250 ml single cream
500 ml vegetable stock
salt and pepper
nutmeg
½ bunch(es) dill, chopped
2 tbsp parsley, chopped
250 g grated cheese
1 tbsp oil
400 g sheets of lasagna

Instructions

In a saucepan, heat the oil and sauté the onion. Sprinkle with the flour and cook stirring for 1-2 minutes. Pour in the cream and the stock. Season to taste with salt, pepper and nutmeg. Cook over low heat for 5-6 minutes. Stir in the cheese, dill and parsley and cook until the cheese has melted.

Preheat the oven to 190°C.

In a buttered casserole, layer alternately some of the sauce, sheets of lasagna, salmon and butternut squash. The last layer should be sauce.

Bake for 30-40 minutes.
