Ingredients
750 g | butternut squash, diced |
250 g | smoked salmon, diced |
1 | onion, chopped |
40 g | butter |
40 g | flour |
250 ml | single cream |
500 ml | vegetable stock |
salt and pepper | |
nutmeg | |
½ bunch(es) | dill, chopped |
2 tbsp | parsley, chopped |
250 g | grated cheese |
1 tbsp | oil |
400 g | sheets of lasagna |
Instructions
In a saucepan, heat the oil and sauté the onion. Sprinkle with the flour and cook stirring for 1-2 minutes. Pour in the cream and the stock. Season to taste with salt, pepper and nutmeg. Cook over low heat for 5-6 minutes. Stir in the cheese, dill and parsley and cook until the cheese has melted.Preheat the oven to 190°C.
In a buttered casserole, layer alternately some of the sauce, sheets of lasagna, salmon and butternut squash. The last layer should be sauce.
Bake for 30-40 minutes.
