salmon and asparagus salad recipe details
Ingredients
1 kg | asparagus, woody ends removed |
salt and pepper | |
1 pinch(es) | sugar |
2 | spring onions, sliced |
1 handful | parsley, chopped |
1 tsp | mustard |
4 tbsp | white wine vinegar |
4 tbsp | oil |
200 g | smoked salmon, diced |
1 tbsp | lemon juice |
Instructions
Cook the asparagus in salted water with a pinch of sugar over medium heat for 10-15 minutes.Drain the asparagus and contain the stock. In a bowl, mix together 2 tablespoons of stock with oil, vinegar, mustard, spring onions and parsley. Season with salt and pepper.
Arrange the asparagus on a serving plate and drizzle over the dressing. Allow to steep for 1 hour.
Season the salmon with lemon juice and pepper. Arrange the salmon on top of the asparagus and serve.
