Ingredients
For the shortcrust pastry: | |
250 g | all-purpose flour |
125 g | butter, soft |
1 | egg |
½ tsp | salt |
2 tbsp | water, cold |
For the topping: | |
4 | eggs |
3 tbsp | cornmeal |
250 g | curd cheese |
150 g | sour cream |
1 tsp | dried lovage |
salt and pepper, to taste | |
12 | cherry tomatoes |
100 g | salami, thinly sliced |
fresh herbs |
Instructions
Knead the ingredients for the dough together, wrap into cling film and allow to rest in the fridge for at least one hour.Preheat the oven to 180°C.
Roll out the dough on a floured surface and line a greased 26cm spring tin with the dough and trim the edges.
Whisk the eggs with the cornmeal, curd cheese, sour cream and lovage. Season with salt and pepper. Wash and halve the tomatoes, set some tomatoes aside for the garnish. Dice the salami and mix the salami and tomatoes into the egg mixture.
Pour the mixture into the spring tin and smooth the surface. Transfer into the preheated oven to bake for 45 minutes. Some minutes before removing the spring form from the oven place the remaining tomatoes and if desired, some herbs on top of the tart.
Serve the tart hot with a dab of curd cheese and garnish with fresh herbs.
