Ingredients
1 | fennel bulb, sliced |
½ | Chinese cabbage (wombok), finely sliced |
1 small | red onion, sliced |
1 | apple, skin on, cut into thin discs |
30 ml | olive oil, extra virgin |
50 g | mayonnaise |
50 g | yogurt, plain, e.g. Greek style |
30 ml | red wine vinegar |
50 g | sour cream |
50 g | Parmesan cheese, grated |
some | black pepper, freshly ground |
some | sea salt |
1 | witlof |
Instructions
Combine fennel, cabbage, onion and apple.For the dressing, combine oil, mayonnaise, yoghurt, vinegar, sour cream and parmesan. Season to taste.
Arrange witlof leaves around a serving bowl. Pile salad into the centre and sprinkle with pepper.
