|1||fennel bulb, sliced|
|½||Chinese cabbage (wombok), finely sliced|
|1 small||red onion, sliced|
|1||apple, skin on, cut into thin discs|
|30 ml||olive oil, extra virgin|
|50 g||yogurt, plain, e.g. Greek style|
|30 ml||red wine vinegar|
|50 g||sour cream|
|50 g||Parmesan cheese, grated|
|some||black pepper, freshly ground|
Combine fennel, cabbage, onion and apple.
For the dressing, combine oil, mayonnaise, yoghurt, vinegar, sour cream and parmesan. Season to taste.
Arrange witlof leaves around a serving bowl. Pile salad into the centre and sprinkle with pepper.
