Ingredients

½	pumpkin, peeled and seeded, cooked and cut into 1cm cubes
1	sweetheart cabbage, cut in bite-sized pieces
3 tbsp	sunflower oil
2 tbsp	rapeseed oil
2 tbsp	white wine vinegar
	salt and freshly ground black pepper
1 tbsp	caraway
1 pinch(es)	sugar

Instructions

Place the vegetables into a salad bowl. Whisk the vinegar with salt, pepper, sugar and caraway until salt and sugar are dissolved. Whisk in the oils until the dressing is creamy. Add to the vegetables and toss. Cover and allow to soak for 30 minutes.

Before serving toss again and adjust the seasoning.
