Ingredients
700 g | saddle of rabbit (approx. 2 saddles) |
½ bunch(es) | basil |
8 slice(s) | Parma ham |
3 tbsp | olive oil |
1 clove(s) | garlic, chopped |

Instructions
With a sharp knife, take the fillets off the bone. Season with pepper. Press basil leaves around the meat and wrap tightly with the ham.In a pan heat the oil. Sauté the garlic until translucent. Add the fillets and fry until golden all around. Transfer all into a roasting tin and roast in the preheated oven at 160°C for approximately 10 minutes. Keep checking every two minutes after that to ensure that the rabbit meat isn’t overcooking and drying out. The meat should be firm but yielding.
Take out of the oven and allow the saddle of rabbit to rest for 5 minutes.
Add a dash of water to the gravy and stir until all the good things from the pan bottom have dissolved.
Cut the meat into slices and serve with the gravy.
