Russian pancakes with caviar recipe details
Eat like a czar with these Russian pancakes, a.k.a. blini. In place of the traditional caviar (a.k.a. sturgeon roe), substitute less expensive salmon or lumpfish roe. Hey, it’s all fish eggs, and unless you’re a private jet owner, you probably won’t know the difference.

Ingredients
Makes: 30 pancakes- 2 1/2 cups flour
- 2 teaspoons quick-rising yeast
- 1/4 teaspoon salt
- 1 tablespoon sugar
- 2 eggs, yolks and whites separated
- 1 cup milk
- 1 2/3 cup warm water
- 2 tablespoons unsalted butter, melted
- Vegetable oil for frying
- For serving: chopped onion, sour cream, lumpfish or salmon roe, and lemon wedges
Preparation method
Prep: 40 mins | Cook: 20 mins | Extra time: 1 hour 30 mins, rising1. Stir flour, yeast, salt, and sugar together in a mixing bowl. In a separate bowl, whisk egg yolks with milk, water, and melted butter.
2. Pour egg mixture into the flour mixture and whisk to combine. Cover with a kitchen towel. Let rise for about 1 1/2 hours, until the batter has risen to twice its original size.
3. Pour 2 tablespoons oil into a large skillet and set over high heat.
4. Beat the egg whites in a bowl until they stiffen. Then gently stir into the blini batter.
5. Cook batter in batches in hot oil, about 4-inch pancakes. Each batch will take about 2 minutes to brown, flipping midway through cooking time.
6. Serve blini with onion, sour cream, roe, and lemon wedges.
