Ingredients
1 l | milk |
125 g | flour |
20 g | fresh yeast |
375 g | wholemeal flour |
4 | eggs |
salt | |
1 tsp | sugar |
100 g | butter |
Instructions
For the sponge starter, put the yeast into a small cup with warm milk. Add 2 tablespoons of flour, stir well and allow to rise for about 30 minutes.Mix the sponge starter with the rest of the flour, the milk, the eggs, the salt and the sugar and knead very well with an electrical dough hook.
Cover the dough and place into the preheated oven at 50°C, but leave open the oven door. After 15 minutes take the risen dough out of the oven and form by hand into flat rounds, the size of your palm.
In a pan, heat some butter and fry the blini until golden on both sides.
Serve fresh. Either sweet with sugar, cinnamon and home made apple sauce, marmalade or whipped cream or savoury with smoked fish or caviar.
