Ingredients

375 ml water
2 tbsp cider vinegar
300 g white bread flour
125 g rye flour
1 tsp salt
2 tbsp vegetable oil
2 tbsp molasses or treacle
1 tbsp dark brown sugar
3 tbsp cocoa powder, unsweetened
1 tsp instant coffee granules
1 tbsp caraway seed
¼ tsp fennel seed, optional
2 tsp active dried yeast

Instructions

To make in a bread machine set to Wholemeal/Whole wheat setting, normal crust and bake cycle.

Place ingredients in bowl in accordance to manufacturers’ instructions and start the machine. Adjust balance of mixture by adding a little more flour or water if required, once initial mixing is complete.

Upon completion of baking cycle, remove bread from pan and allow to cool on a wire rack. Slice once cold. Serve with cheese, cold meats etc with or without pickles.
