Apricot ambrosia recipe details
Ingredients
200 g | dried apricots, soaked in a little white wine or orange juice |
200 ml | fresh orange juice |
6 leaves | gelatin |
250 g | mascarpone |
Instructions
Cook the apricots in the orange juice until soft. Remove from heat. Soak the gelatin leaves in cold water and squeeze out excess when soft. Place in a microwavable bowl and heat for ten – twenty seconds in the microwave on full power to dissolve the gelatin. With no delay, pour over the orange and apricot fluid and beat with a small whisk to distribute the gelatin and leave to cool.When cool, puree the mixture, beat in the mascarpone and allow to set.
