Rum Runner’s French Toast recipe

- 3/4 cup melted coffee ice cream
- 3 eggs, beaten
- 1 Tablespoon rum
- 1/4 teaspoon cinnamon
- 10 slices raisin cinnamon bread
- 8 scoops coffee ice cream
Combine melted ice cream, eggs, rum, and cinnamon in a bowl. Beat with a wire whisk until blended. Dip raisin bread into egg mixture, coating well. Grill on electric griddle set at 300 degrees, using butter, until brown on each side – about 5 minutes per side. Slice bread slices into wedges and place 5 wedges on each plate; top with two scoops of coffee ice cream. I serve maple syrup on the side and add bacon strips to each plate.
