Ingredients
50 g | butter |
75 g | brown sugar |
75 g | white sugar |
300 g | dried mixed fruit |
2 tsp | vanilla flavouring |
50 ml | semi-skimmed milk |
1 | egg |
1 tbsp | honey |
1 tbsp | treacle |
4 tsp | mixed spice |
120 ml | rum |
300 g | self-raising flour |
1 | tea bag |
½ tsp | cinnamon |
1 tsp | nutmeg |
100 ml | boiling water |
1 tsp | caster sugar |
Instructions
Place 300g of dried mixed fruits in a bowl with a teabag, add mixed spices, caster sugar, nutmeg and cinnamon, then pour in boiling water. Leave for 1 hour to soak. Then add part of the rum to the mixture. Leave for a further 1 hour.In a mixing bowl mix, blend together butter and sugars until it becomes crumbley and can form a paste. Add the egg and continue to whisk for a 2-5 minutes.
Remove teabag and take 150g of the soaked mixed fruit and put in another bowl, allow some of the liquid in also, add the milk, then put into a blender until completely blended.
Preheat oven to 130°-150°C.
Once blended, empty the mixture back into the mixing bowl and mix it in.
Then add the rest of the soaked mixed fruit, vanilla flavouring, honey and treacle to the mixing bowl. Mix for a further 5 minutes.
Pour mixture into loaf shape tins and place in oven on middle shelf. This should make two medium loafs. Allow around 35 minutes to 1 hour to cook.
Test by inserting a toothpick in the middle of the loaf, if it comes out clean its cooked.
Slide a knife around the sides of the loaf pan and turn it over to allow the loaf to fall out onto a plate, poke small holes in the bottom with a toothpick and pour on the rest of the rum.
Allow to cool the cut into slices. This tastes great with a nob of butter and slice of cheese!
