Rubbed and roasted salmon recipe details
- Ingredients
- 1 salmon side fillet
- Rub:
- 1 Tablespoon chile powder
- 1 Tablespoon brown sugar
- 1 Tablespoon white sugar
- 1 Tablespoon garlic powder
- 1 teaspoon cayenne pepper
- 1 teaspoon kosher salt
- 1 teaspoon cinnamon
- 1 teaspoon ground thyme
- 1 teaspoon cardamom
- 1 teaspoon onion powder
- 1 teaspoon black pepper, freshly ground
Mix all ingredients together. Rub mixture over salmon (flesh side only) and let marinate about 30 minutes. Prepare a very hot grill or heat oven to 400 degrees.
Lay fish over grill and cover. Do not touch until salmon releases itself from grill (it will break if you try to move it too early). If oven roasting, line a heavy baking sheet with foil and roast until flaky. Remove from grill to serving platter. Serve with Chipotle Aioli on crackers as an appetizer or entree.
