Ingredients
230 ml | extra virgin olive oil |
2 | egg yolk(s), fresh |
3 clove(s) | garlic, peeled |
½ tsp | cayenne pepper |
5 | saffron threads, crumbled |
100 g | mayonnaise |
Instructions
Crush the garlic to a fine mash. Add the egg yolks and beat into mayonnaise while adding the olive oil step by step.Add saffron and pepper when the sauce is smooth and thick.
Note:Can be kept in the fridge until it is served the same or next day.
Serving suggestions:fish dishes, fish soup and Bouillabaisse.
