Instructions
Either make up half-recipe amounts of the individual flavours or use approximately half of each of the previously made relevant flavours.Lightly grease a 2lb or 900g loaf tin with vegetable oil and line it with cling film. Whisk the chocolate ice cream until soft and pour into the lined tin.Cover and place in freezer for 1½-2 hours until nearly set.
Whisk the strawberry ice cream until soft and pour on top of the chocolate ice cream. Return to freezer and freeze for another 1½-2 hours until nearly set.
Repeat for the vanilla flavour and pour on top of the other two layers. Refreeze until required to serve.
Remove ice cream from freezer and dip into into warm water until the edges soften sufficiently to release the ice cream. Turn out onto a serving plate and remove cling film. Using a knife warmed in hot water, cut the ice cream into slices so that you present the three distinct layers.
Serve immediately, with ice cream wafers and a sprig of mint, if wished.
Will serve 8-10 with ease.
About this recipe:
Neopolitan Ice Cream was first introduced as something similar to a bombe, a pudding-shaped assembly of 3 or 4 different flavoured ice creams, semi-freddos, or sorbets. Over time the arrangement was simplified to a block format and the flavours ‘standardised’ to the three used here. The two requirements are that the components should be distinct flavours and also be differentiated by different colours, using food colouring if necessary. The colours most often used are white, red or pink, green (reflecting the colours of the Italian flag) and brown.
