Rocket and Sundried Tomato Salad with Gnocchi recipe

Ingredients
1 bunch(es) | rocket |
200 g | sundried tomatoes in oil, sliced |
1 | red onion, sliced |
100 g | black olives, sliced |
120 g | Feta cheese, diced |
400 g | gnocchi, ready to cook |
2 tbsp | green pesto |
1 tbsp | balsamic vinegar |
salt and freshly ground black pepper | |
2 tbsp | olive oil, or the oil of the tomatoes |
olive oil, for frying |
Instructions
Mix together the oil, vinegar and the pesto. Season with salt and pepper. Add the tomatoes, Feta cheese, olives and onion. Mix gently, cover and allow to chill for 4 hours in the refrigerator.Cook the gnocchi in salted water until done. In a pan, heat the olive oil and stir-fry the gnocchi until golden.
In a bowl, combine the gnocchi with the tomato and Feta cheese mixture. Arrange the rocket on plates and divide the Salad on top.
