Ingredients

1 bunch(es)	rocket
200 g	sundried tomatoes in oil, sliced
1	red onion, sliced
100 g	black olives, sliced
120 g	Feta cheese, diced
400 g	gnocchi, ready to cook
2 tbsp	green pesto
1 tbsp	balsamic vinegar
	salt and freshly ground black pepper
2 tbsp	olive oil, or the oil of the tomatoes
	olive oil, for frying

Instructions

Mix together the oil, vinegar and the pesto. Season with salt and pepper. Add the tomatoes, Feta cheese, olives and onion. Mix gently, cover and allow to chill for 4 hours in the refrigerator.

Cook the gnocchi in salted water until done. In a pan, heat the olive oil and stir-fry the gnocchi until golden.

In a bowl, combine the gnocchi with the tomato and Feta cheese mixture. Arrange the rocket on plates and divide the Salad on top.
