|200 g||sundried tomatoes in oil, sliced|
|1||red onion, sliced|
|100 g||black olives, sliced|
|120 g||Feta cheese, diced|
|400 g||gnocchi, ready to cook|
|2 tbsp||green pesto|
|1 tbsp||balsamic vinegar|
|salt and freshly ground black pepper|
|2 tbsp||olive oil, or the oil of the tomatoes|
|olive oil, for frying|
InstructionsMix together the oil, vinegar and the pesto. Season with salt and pepper. Add the tomatoes, Feta cheese, olives and onion. Mix gently, cover and allow to chill for 4 hours in the refrigerator.
Cook the gnocchi in salted water until done. In a pan, heat the olive oil and stir-fry the gnocchi until golden.
In a bowl, combine the gnocchi with the tomato and Feta cheese mixture. Arrange the rocket on plates and divide the Salad on top.
