There are only a few ways that I like green beans. This is one of my favorites. It is so simple, but so tasty. This recipe is all about simple and you don’t get more simple than green beans and potatoes cooked with onion, garlic and olive oil until soft and crispy. If you would like to make this is meal in itself you can add diced ham or crisp cooked and crumbled bacon when you add the vegetables to the hot oiled skillet. I like to serve it with a small green salad or a cucumber tomato salad.

Ingredients
Serves: 4- 4 cups fresh green beans, trimmed and strings removed
- 1/4 cup garlic cloves, sliced thick
- 2 large russet potatoes, peeled and cut in to 1-inch cubes
- 1/4 cup coarsely diced red onion
- 1/4 teaspoon red pepper flakes (more if you like it spicy)
- 1/4 cup olive oil, light flavored
- salt to taste
- black pepper, fresh ground to taste
Preparation method
Prep: 20 mins | Cook: 40 mins1. First we need to cook the green beans, potatoes, onions and garlic. You can either boil them in a pot until the potatoes are tender through and through (you do want the green beans to be soft as well, I find cooking everything together gets everything cooked to the corrected stage just fine) or you can use a steamer and steam them. What is important, very important is that the potatoes be fully cooked, tender through and through and that the green beans be very well cooked. You do not want anything to be crisp for this recipe.
2. Once the vegetables have been cooked, remove them and let them cool off a bit. In a large skillet add the oil and red pepper flakes and heat over high heat until the red pepper flakes begin to sizzle. Carefully add the vegetables. Spread the vegetables out evenly, cover the skillet with a lid, reduce the heat to medium and allow to cook for 5 minutes or until the vegetables on the bottom and well browned and crisped up. Gently turn the vegetables, cover and allow the other side to crisp up. You can add an extra tablespoon or two of oil if needed.
3. The dish is ready when the potatoes are brown and crispy, the green beans have some browning, the onion and garlic too. Add the salt and pepper and stir well. Don’t worry if the potatoes start to break apart. You want this to look like very rustic mashed potatoes with soft falling apart green beans in it. Serve immediately.
