Roasted pumpkin soup recipe details
Ingredients
1 | pumpkin |
1 l | vegetable broth |
100 ml | whipping cream |
some | sour cream |
salt and pepper, to taste | |
chili flakes | |
some | olive oil |
Instructions
Cut the pumpkin into wedges and put on a baking sheet. Sprinkle with salt and pepper and some olive oil.Preheat oven to 200°C and bake the pumpkin for approximately 40 minutes.
Now peel off the skin and puree with a little water. Add to the broth and cook until hot. Season well and add the whipping cream.
Serve in plates with some sour cream in the middle.
