Ingredients
unbaked pie shell | |
For the Filling: | |
500 g | pumpkin purée |
400 ml | condensed milk |
2 medium | eggs, yolks only |
1 tsp | cinnamon, ground |
½ tsp | ginger, ground |
½ tsp | nutmeg, ground |
½ tsp | salt |
2 medium | eggs, whites only |
For the streusel topping: | |
2 tbsp | flour |
50 g | brown sugar |
1 tsp | cinnamon, ground |
2 tbsp | butter |
100 g | walnuts, chopped |
Instructions
Preheat the oven to 200°C.Filling:
Combine the pumpkin puree, condensed milk and egg yolks in a bowl. Add cinnamon, ginger, nutmeg, and salt and mix well.
In another bowl whip egg whites until soft peaks form and then fold into pumpkin mixture.
Pour filling into pie shell and bake for 15 minutes.
Streusel topping:
Combine the flour, brown sugar, and cinnamon in a bowl. Blend in the butter and mix with an electric blender until the mixture is crumbly. Add the chopped nuts and toss. Take pie out from the oven and sprinkle the topping over the pie.
Reduce the heat to 170°C and bake an additional 40 minutes.
