Ingredients
Serves: 6- 6 cups carrot sticks
- 2 teaspoons olive oil
- 1/4 teaspoon salt
- Freshly ground black pepper, to taste
- 1 tablespoon chopped fresh parsley
- 1 teaspoon grated lemon zest
- 1 tablespoon fresh lemon juice
Preparation method
Prep: 10 mins | Cook: 20 mins1. Preheat oven to 450 degrees F and coat a shallow baking pan with nonstick cooking spray.
2. In the baking pan, toss carrots with olive oil, salt, and pepper. Bake for 20 minutes, until softened and beginning to caramelize.
3. Sprinkle with parsley and lemon zest, and drizzle with lemon juice. Stir to combine, then serve.
