Ingredients
Serves: 4- 6 cloves garlic, peeled
- 1/4 cup chopped parsley
- 2 tablespoons chopped fresh tarragon
- Zest from 1 lemon
- Salt and pepper
- 1/4 cup olive oil
- 1 (3 to 4 pound) chicken, butterflied (ask your butcher to do this)
Preparation method
Prep: 15 mins | Cook: 45 mins | Extra time: 15 mins, resting1. Preheat oven to 450 degrees F.
2. Chop garlic, parsley, tarragon, lemon zest, and 1 teaspoon salt together in a food processor. Add three tablespoons olive oil and pulse to combine.
3. Rub the mixture under the skin of the chicken, then drizzle remaining olive oil over the chicken. Sprinkle with salt and pepper and set in a roasting pan.
4. Bake for about 35 minutes, then cover with foil and continue to bake until the chicken reaches an internal temperature of 165 degrees, about 10 more minutes.
5. Remove from heat and let stand for 15 minutes, then slice meat and serve.
