Roasted beetroot and rocket salad with horseradish and stilton recipe details
Ingredients
450 g | small fresh beetroot, trimmed and peeled |
2 tbsp | vegetable oil |
1 tbsp | double cream |
1 tbsp | freshly grated horseradish |
1 tbsp | white wine vinegar |
100 g | rocket |
100 g | Stilton cheese, crumbled |
salt and freshly ground black pepper |
Instructions
In a saucepan cover the beetroot with water and bring to a boil. Reduce the heat and cook for 15 minutes. Transfer the beetroot into a shallow casserole dish, sprinkle with oil and season with salt and pepper. Roast in the preheated oven for 20 minutes at 220°C.In a bowl whisk the cream with oil, horseradish and vinegar. Season to taste with salt and pepper. Set aside 2 tablespoons of the dressing. Add the rocket and the cheese into the bowl and toss gently.
Divide the salad on plates and arrange the quartered beetroots on top. Drizzle with the reserved dressing.
