Beetroot in a Sweet Sour Sauce recipe

|1 tsp||lemon juice|
|2 tbsp||sour cream|
Bring water to a boil and cook the beetroot until done. Drain, peel and slice the beetroot.
In a saucepan, heat the butter and sauté the onions until lucent. Add the flour and cook stirring until pale yellow. Whisk in the milk and bring to a boil, stirring constantly. Reduce the heat and simmer for about 10 minutes.
Add the beetroot and the sour cream and toss gently. Season to taste with salt, sugar, lemon juice and vinegar.
