Roast turkey joints in orange and plum sauce recipe details
Ingredients
2 ½ kg | turkey joints |
1 sprig(s) | rosemary, chopped |
1 | orange, zest and fillets |
2 tsp | salt |
1 tbsp | olive oil |
2 tbsp | balsamic vinegar |
3 | plums, halved and stones removed |
Instructions
In a mortar, mix together the rosemary, orange zest and salt. Pestle the mixture until smooth. Brush the turkey joints with the olive oil and the orange salt. Preheat the oven to 250°C.Place the joints into a casserole dish and bake until well browned. Turn around and bake from the other side until well browned. Reduce the heat to 130°C. Pour the vinegar into the casserole. Arrange the orange fillets and the plums around the turkey and bake for 3 hours. Add a dash of water, if necessary.
Serve the turkey joints with the sauce and freshly cooked vegetables.
