Roast chicken and potato dumplings recipe details

Ingredients
Serves: 4- 3 pounds chicken drumsticks, patted dry
- Salt and pepper
- 1/3 pound baking potatoes, peeled
- 2 tablespoons butter
- 2 yellow onions, finely chopped
- 6 cups chicken broth
- 1 egg
- 1/2 cup plus 2 tablespoons flour
Preparation method
Prep: 25 mins | Cook: 1 hour1. Preheat oven to 425 degrees F. Sprinkle chicken with salt and pepper and place in a baking sheet with sides (to keep the chicken juices from running off).
2. Bake for 45 minutes, or until chicken is no longer pink in the middle, then shred the meat off the bones.
3. While chicken is roasting, cover potatoes with cold water in a large saucepan. Set over medium heat. When water boils, turn heat down to low and cook for about 45 minutes. Drain, then mash with 1 teaspoon salt.
4. Add egg and flour to the mashed potatoes to form a stiff dough. Roll into three 3/4-inch logs on a floured work surface. Cut into 1-inch pieces, then flatten.
5. Melt butter in a soup pot over medium heat. Cook onion in melted butter for about 8 minutes until tender, then add chicken broth.
6. When broth boils, add the dumplings. Cook for about 5 minutes, then add the chicken. Heat through, then serve.
