Roach's key lime shrimp recipe details
Grilled shrimp with a sweet ‘n boozy taste. Boil the remaining marinade to make a nice, sticky sauce to glaze the shrimp with.

Ingredients
Makes: 6 skewers- 1 cup good quality rum
- 12 key limes, juiced
- 2 tablespoons 5-pepper spice mix (such as Johnny’s(R) Jamaica Me Crazy)
- 1 cup sugar
- 1 pound shell-on, deveined 26-30 count shrimp
- 6 (6-inch) bamboo skewers, soaked in water
Preparation method
Prep: 5 mins | Cook: 6 mins | Extra time: 1 hour, marinating1. Take a shot of rum.
2. In a gallon-sized zip-top bag, combine rum, lime juice, pepper and sugar. Seal and shake until the sugar has dissolved.
3. Put shrimp in the marinade, and mix to evenly coat. Press all of the air out of the bag, and seal. Marinate in the refrigerator 1 hour to 1 1/2 hours. No more than 1 1/2 hours max or the lime juice and rum will start to cook the shrimp!
4. Preheat grill to medium-high. Thread the shell-on shrimp onto the soaked skewers, about 5 per skewer.
5. Cook the shrimp skewers on the preheated grill 3 to 4 minutes per side until the shells turn pink and the center of the shrimp is no longer translucent.
